I got Fuki at the local farmers market,
Fuki is Petasites japonicas also knows as bog rhubarb or giant butterbur.
I cooled them with my parents organic dried shiitake mushroom and Fuki stick with my mom's
organic handmade miso and vinegar dip called Sumiso.
When this vegetable is available, everyone knows that spring is near. It is delicious and succulent -
a rare treat.
